  3. 1 Star Anise
  4. 1 inch cinnamon stick
  5. 1 Green Cardamom
  6. 2 Peppercorns
  7. 2 cloves
  8. 4 tbsp oil
  9. Salt to taste
  10. 200 g Spinach, blanched
  11. 1 inch Ginger
  12. 1 Green Chili
  13. 1 Onion , thinly sliced
  14. 1 Bay Leaf
  15. 1 Capsicum, chopped
  16. 1 Onion, Chopped
  17. 1 Carrot, Chopped
  18. 1 tsp Cumin seeds
  19. 1/2 cup cauliflower florets
  20. 2 Potatoes , cubed
  21. 1 tsp red chili powder
  22. 1 tsp Coriander powder
  23. 1/2 tsp Turmeric
  24. 1 tsp Garam Masala
  25. 1 tsp Biryani Masala
  26. 2 tbsp curd
  27. 250 g, Paneer Cubes
  28. 6 tbsp Mint leaves
  29. 2 tbsp Saffron Milk
  30. 8 tbsp Chopped coriander leaves
  31. 1 tbsp Chili Garlic Ginger Paste

Instructions

  1. BOIL 2 .5 CUPS WATER. ADD 1 STAR ANISE, 1 CINNAMON STICK, 2 CLOVES, 1 GREEN CARDAMOM, 2 PEPPERCORNS
  2. ADD 1 TBSP OIL, 1 CUP PRE-SOAKED RICE, 1/2 TSP SALT AND COOK FOR 3-4 MINS
  3. STRAIN EXCESS WATER. WASH WITH COLD WATER, KEEP IT ASIDE
  4. ADD 200 GMS BLANCHED SPINACH, 4 TBSP CORIANDER LEAVES , 3 TBSP MINT LEAVES IN A GRINDER
  5. NOW ADD 1 INCH PIECE OF GINGER, 1 GREEN CHILI AND GRIND TO SMOOTH PUREE
  6. FRY 1 SLICED ONION IN 3 TBSP OIL TILL BROWN, KEEP IT ASIDE
  7. ADD 1 TSP CUMIN, 1 BAY LEAF, 1 CHOPPED ONION, 1 CAPSICUM , 1 CARROT IN SAME PAN. SAUTE FOR 3 MINUTES
  8. ADD 1 TBSP CHILI-GARLIC-GINGER PASTE. SAUTE FOR 1 MINUTE
  9. ADD 1/2 CUP CAULIFLOWER , 2 POTATOES AND MIX WELL
  10. ADD 1 TSP EACH OF RED CHILI, CORIANDER , 1/2 TSP TURMERIC. SAUTE FOR 1 MINUTE
  11. ADD 1 TSP EACH OF GARAM MASALA, BIRYANI MASALA. MIX WELL FOR FEW SECONDS
  12. ADD SPINACH PUREE, SALT , 2 TBSP CURD AND MIX WELL. TAKE OUT HALF OF VEGGIES MIXTURE
  13. ADD SEMI-COOKED RICE AND SPREAD EVENLY OVER VEGGIES
  14. ADD 1 TBSP SAFFRON-MILK , 10-12 PANEER CUBES, FEW MINT LEAVES , 2 TBSP FRIED ONIONS
  15. REPEAT THE SAME LAYERS, COVER THE PAN WITH FOIL AND CLOSE TIGHTLY WITH A LID, COOK FOR 10 MINS ON LOW HEAT
  16. SPRINKLE FRESH CORIANDER, SERVE HOT WITH RAITA
