Lemon Tart

Ingredients to make Lemon Tart

  • 2 and 1/4 cups all purpose flour sifted
  • Pinch of salt
  • 3 eggs
  • 3/4 cup butter at room temprature
  • 2 cups caster sugar(adjust acc. to taste)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/2 cup fresh lemon juice
  • 1 tsp Caster sugar extra
  • 200ml fresh cream

How to make Lemon Tart

  1. Mix softened butter,vanilla extract,1/2 cup sugar and salt in a large bowl.Add 2 cups of flour in the same bowl to make a soft dough(add an additional tablespoon of butter if it seems dry)
  2. Roll out and press the dough into a medium tart pan and keep it in a refrigerator for half an hour.
  3. Preheat oven to 175 C and bake the crust for 18-20 minutes,until lightly coloured.
  4. Take a bowl and add 1 and 1/2 cups sugar,lemon zest, 1/2 tsp vanilla extract, lemon juice,eggs , cream and 1/4 cup flour and mix well.Pour this filling in to the crust shell.
  5. Bake the tart until filling is set for about 20-30 minutes (and the crust is golden, if its browning too much and filling is not set, then cover with a piece of foil and continue baking).Let the tart cool .Sift extra caster sugar on top and chill thoroughly before serving.
