Cream of mushroom soup

Ingredients to make Cream of mushroom soup

  • 1/2 cup / 110 gms of spring onions
  • 320 ml water
  • 100 ml milk
  • 2 tbsp cream
  • 1 tin /425 gms mushroom
  • Salt to taste
  • 2 tbsp Oil

How to make Cream of mushroom soup

  1. Heat oil in a sauce pan. Add in the chopped spring onions including the green parts.
  2. Saute this for 2-3 mins.
  3. Drain the mushrooms and add it in with the onions. Stir this for a while.
  4. Now pour water into it and give it a good stir. Cover and cook the mushrooms for 3-4 mins .
  5. With the help of an immersion blender blend this mixture into a smooth puree.
  6. Turn on the flame, pour milk into the soup and bring it to a boil.
  7. Once it is boiled, turn off the flame and add in the cream. Give this a nice stir.
  8. Your cream of mushroom soup is now ready to be served.
My Tip: To give it a rich taste you can add a tbsp of butter instead of oil .
