ABOUT Creme du barry RECIPE

A low fat cauliflower soup recipe.

Ingredients Serving: 3

  1. 2 cups of cauliflower florets
  2. 2 cloves garlic
  3. 1 green onion (green part for garnishing )
  4. 2 tbsp olive oil
  5. 1 cup milk (full cream) or 2 tbsp cream
  6. Oregano a pinch (optional)
  7. 500 ml chicken stock
  8. Salt to taste
  9. To garnish:
  10. A dash of chilli flakes
  11. A dash of oregano

Instructions

  1. Chop the cauliflower, onion, garlic.
  2. Heat oil in a sauce pan and add the onion and garlic, saute it for 1 min and add in the cauliflower.
  3. Saute for another 2 -3 mins and add the oregano, then pour in the chicken stock .
  4. Cover and cook till the cauliflower becomes soft .
  5. Turn off the flame and with the help of an immersion blender form this mixture into a smooth puree.
  6. Put this puree mixture back on the stove, pour milk into it. Stir well and bring it to a boil .
  7. Add salt as per taste and stir well.
  8. Serve warm with croutons or toasted bread .
