ABOUT Hariyali Deewani Handi RECIPE

This deewani handi is one of royal dishes served in restaurants. It has cashew based rich mild creamy gravy loaded with goodness of mix vegetables. Authentically cooked in earthen handi, but can also be cooked in any other pan or WOK.

Ingredients Serving: 4

  1. Spinach 1 cup
  2. Sliced Onion 1
  3. Cashews 2 tbsp
  4. Diced capsicum 1 small
  5. Carrot diced 1/4 cup
  6. Green peas in 1/4 cup
  7. Corn kernels 1/4 cup
  8. Cauliflower florets 1/4 cup
  9. Potato diced 1 small
  10. Mushrooms halved 2 tbsp
  11. Ginger chili paste 1 tsp
  12. Cumin Seeds 1 tsp
  13. Star anise 1
  14. Javitri 2 strands
  15. Red chili powder 1/2 tsp
  16. Coriander powder 1/2 tsp
  17. Garam masala 1/2 tsp
  18. Kasoori methi 1 tsp
  19. Salt 1 tsp
  20. Curd 1 tbsp
  21. Fresh cream 1 tbsp
  22. Oil 3 tbsp

Instructions

  1. Wash and blanch spinach leaves in boiling water for 2-3 minutes.
  2. Grind leaves to form a puree
  3. Fry cashews in oil until golden brown
  4. Grind onion and cashews to a fine paste.
  5. Blanch carrots, cauliflower, peas, corns in boiling water for 10 minutes. Drain excess water
  6. Heat 2 tbsp oil. Add cumin seeds, star anise and Javitri.
  7. Add ginger chili paste and saute for a minute
  8. Add onion paste. Saute for half minute.
  9. Add capsicum, red chili powder, coriander powder, Garam masala and kasuri methi. Roast spices until gragrant
  10. Add curd and gently mix. Cook for half minute.
  11. Add water , blanched vegetables and mix well. Cook for a minute.
  12. Add spinach puree and salt. Mix well. Cook for another two minutes.
  13. Add cream and mix. Cook for a minute and switch off. Serve hot
