ABOUT Banarasi Matar Nimona (no onion no garlic) RECIPE

This is a simple but delicious vegetable dish from Banaras.It is made from fresh tender peas and potatoes and has a distinct flavour.You can enjoy this dish with roti,paratha or rice also.

Ingredients Serving: 3

  1. Green peas-1 cup
  2. Potatoes-1/2 cup or 2 medium - cubed
  3. Ginger green chili paste-1 tsp
  4. Mustard oil-2 tbsp
  5. Cumin seeds-1 tsp
  6. Fenugreek seeds-1/4 tsp
  7. Asafoetida-1/4 tsp
  8. Salt to taste
  9. Coriander cumin powder-2 tsp
  10. Red chili powder-1 tsp
  11. Garam masala-1/2 tsp
  12. Ghee-1 tbsp
  13. Coriander leaves-1 tbsp

Instructions

  1. Keep 2 tsp peas aside and crush the remaining green peas coarsely
  2. Heat oil in a pan. Fry cubed potatoes until golden brown and keep it aside
  3. In the same pan, add cumin seeds, fenugreek seeds and hing.
  4. Add ginger chili paste and then the crushed peas with non crushed peas
  5. Mix well.Cover and cook for 2 to 3 minutes stirring occasionally
  6. When it is cooked,it will become slightly brown.
  7. Add the salt and spices. Mix well
  8. Add 2 cups of water and potatoes.
  9. Cover and simmer for 5 to 6 minutes.Lastly add garam masala.
  10. Transfer to serving bowl . Add ghee and garnish with coriander.Serve hot with Roti or rice.
