ABOUT Peas Tahini Dip RECIPE

This is a very versatile recipe shared by a very dear friend. It can be used as a dip or as a sandwich spread. The dip uses the fresh tender baby peas that flood the markets in winters. The addition of Tahini gives it a very nutty earthy flavor and aroma. I love to use it as a dip with the fresh flatbreads.

Ingredients Serving: 4

  1. 3/4 cup tender green peas or frozen baby peas
  2. 1/2 cup coriander, chopped
  3. 1 heaped tablespoon tahini
  4. 3 small cloves of garlic
  5. 1 green chili
  6. 2 tablespoon extra virgin olive oil -adjust
  7. 1 tablespoon yogurt (optional)
  8. a few drops of lemon juice
  9. salt to taste
  10. sesame seeds, pomegranate arils and extra virgin olive oil to garnish

Instructions

  1. If using fresh peas blanch and drain well. If using frozen peas thaw and drain properly.
  2. In a chutney jar/mixer jar, grind the garlic, chili and tahini. Grind well to get a homogeneous mix.
  3. To the mix add the drained peas, coriander and salt. Grind to a smooth paste. Optionally add a tablespoon of yogurt/oil to ease the grinding.
  4. Add oil and lemon juice and grind well
  5. Transfer the dip in to a serving bowl, pour little olive oil and sprinkle little sesame seeds on the top.

Can I use refined oil in the place of olive oil?
