ABOUT Cream of Broccoli Soup RECIPE

This soup is everything a soup should be. It's tasty as well as healthy. Perfect soup to fill your tummy with health benefits as well as taste.

Ingredients Serving: 4

  1. Broccoli - one medium floret
  2. onion chopped- one small
  3. 2 Garlic chopped
  4. Oregano 1/4 tsp
  5. Nutmeg powder 1/4 tsp
  6. Vegetable stock/ water 1.5 cups
  7. Milk 1.5 cups
  8. Whole wheat flour 1.5 tbsp
  9. Butter 2 tbsp
  10. Salt according to taste
  11. Freshly crushed black pepper as required

Instructions

  1. Boil enough water with 1/4 tsp salt in a pot. let the water vigorously boil. Switch off and add the broccoli florets, wait for about 15-20 seconds and then drain the florets.
  2. Heat butter in a sauce pan. Add the onions and garlic and saute till they soften. Add the flour. Stir and saute for 2 minutes on a low flame.
  3. Add broccoli. Stir and add water or vegetable stock to it, stir well. Cover and simmer till the broccoli is cooked well and tender.
  4. when the soup mixture is still slightly hot or warm, blend the soup till smooth and add to saucepan
  5. Add hot milk to the pureed soup and stir well. Simmer soup on a low flame. Season with oregano.
  6. Gently heat through the soup without boiling stirring occasionally. Lastly season with salt, freshly crushed black pepper and nutmeg powder. Pour soup into individual serving bowls and garnish with croutons or cream.
