Ingredients to make Tender greens

  • cabbage 1/2 cup shredded
  • capsicum diced 1/2 cup
  • Green grapes halved 1/2 cup
  • Broccoli 1/2 cup
  • Green apple sliced finely 1/2 cup
  • Baby spinach leaves 1/4 cup
  • Lettuce leaves shredded 1/2 cup
  • Corriender leaves cut finely 1/8 cup
  • Figs soaked overnight- 5
  • Balsamic vinegar 1 tbsp
  • lemon juice 2 tbsp
  • Mint sugar 1 tbsp or mint leaves+ sugar
  • Roasted pumpkin seeds 2 tbsp
  • olive oil 1 tbsp
  • Sea salt 1/4 tsp
  • Freshly ground pepper 1/8 tsp

How to make Tender greens

  1. To prepare the dressing, put soaked figs, balsamic vinegar, olive oil, salt and pepper in a blender and make a puree of it.
  2. Mix all these greens together and pour the dressing on it.
  3. Toss well and sprinkle roasted nuts on it.
  4. Serve and enjoy!
