ABOUT Basil Almond Pesto RECIPE

Pesto is basically a sauce originated from Italy, prepared using pine nuts. Basil leaves, garlic, salt, Parmesan cheese or pecorino sardo (cheese made from sheep's milk) blended using Olive Oil. Pesto is used in many veg, non-veg dishes. Pine nuts can be substituted with walnuts, cashew nuts, almonds, peanuts as these nuts have buttery, creamy texture. I tried this recipe with roasted Walnuts as well. However, the basil pesto with roasted Almonds tastes awesome.

Ingredients Serving: 4

  1. Fresh Basil leaves – 100gms
  2. Roasted Almonds - 3.5 tbsp.
  3. Black paper – 1/2 tsp
  4. Garlic cloves - 2
  5. Grated Parmesan cheese – 3 tbsp.
  6. Olive oil – 1/2 cup
  7. Lemon juice - 1/2 lemon or 1 tbsp
  8. Salt to taste

Instructions

  1. Grind Roasted almonds and Black pepper into fine paste.
  2. Add fresh basil leaves, garlic cloves, salt, half of oil and Parmesan cheese. Continue blending until mixture is well blended but still has some rough texture. Scrape down the sides. Add remaining olive oil. Blend again.
  3. Store in airtight container and freeze. Use as required
