Spinach Tacos

ABOUT Spinach Tacos RECIPE

Taco shells made with goodness of spinach ,stuffed with protein rich soya granules and topped with crisp vegetables and a low fat yogurt and zuchchini dip.

Ingredients Serving: 4

  1. For taco shells: 1/2 cup maize flour
  2. 1/4 cup maida.
  3. 10 to 12 - spinach leaves.
  4. Salt to taste
  5. 1 tablespoon oil
  6. 1 teaspoon pizza mix
  7. Water as required.
  8. For Filling : 1/2 cup soya granules.
  9. Salt to taste.
  10. 1/4 cup curd
  11. 1/4 teaspoon red chili powder.
  12. 1/4 teaspoon jeera powder
  13. 1 onion finely chopped.
  14. 1 tablespoon schezwan sauce.
  15. 1 tablespoon hot and sweet sauce.
  16. For Dip: 1/2 cup hung curd
  17. 2 tablespoons chipotle sauce.
  18. 2 tablespoon cream
  19. Salt to taste.
  20. 1/4 cup very finely chopped zucchini.
  21. 1 tablespoon chopped coriander leaves.
  22. For serving :sliced zucchini,radish ,colored bell peppers as required

Instructions

  1. For Taco Shells: Blanch spinach leaves
  2. Grind spinach to smooth puree
  3. In a bowl mix maize flour ,maida ,salt ,oil and pizza mix
  4. Add spinach puree with little water and knead soft dough. Rest for 10 minutes
  5. Make small chapattis ,prick them and deep fry in taco shell shape as shown in picture
  6. Store in airtight container.
  7. For Filling: Soak 1/2 cup of soya granules in warm water for 10 minutes,drain it.
  8. Mix curd,salt ,red chili powder and keep aside for 10 minutes.
  9. Heat oil in a pan ,saute onions till translucent ,add soya granules and cook till mixture is dry .Add schezwan sauce , hot and sweet sauce .Mix well .
  10. For the dip: Mix hung curd ,zucchini , coriander leaves , chipotle sauce ,salt and fresh cream.
  11. Assemble vegetables ,filling and dip .
  12. Fill the taco shells with soya granules, vegetables and top it with dip.Serve immediately.
