Homemade Vegetable Stock
Ingredients to make Sundried Tomato Soup
- 1 tsp butter
- 1 tsp olive oil
- 2 cloves of garlic
- 1 small onion siced
- 1 cup sundried tomatoes
- 2 tomatoes diced
- 2 cup vegetable stock
- Pepper to taste
- Sugar to taste
- 1/4 tsp dried thyme
- Salt to taste
- 2 tblsp fresh cream
Steps to make Sundried Tomato Soup
- In a large saucepan heat butter and oil together. Mince the garlic and add into the butter along with onions. Saute for 3 to 4 minutes or until the onions have softened.
- Add in the thyme, sundried tomatoes, diced fresh tomatoes and saute for another 3 minutes. Add in half the stock and cook till the tomatoes have softened about 15 minutes.
- Turn off the heat. Using a hand blender, blend till the tomatoes have pureed. Add in the remaining stock. Adjust for seasoning by adding sugar, salt and pepper. Keep aside.
- When you are ready warm the soup. Add in the cream. Pour the soup into a bowl and decorate with additional sundried tomatoes and serve.
