Sundried Tomato Soup

Recipe Ingredients

  • 1 tsp butter
  • 1 tsp olive oil
  • 2 cloves of garlic
  • 1 small onion siced
  • 1 cup sundried tomatoes
  • 2 tomatoes diced
  • 2 cup vegetable stock
  • Pepper to taste
  • Sugar to taste
  • 1/4 tsp dried thyme
  • Salt to taste
  • 2 tblsp fresh cream

Recipe Preparation

  1. In a large saucepan heat butter and oil together. Mince the garlic and add into the butter along with onions. Saute for 3 to 4 minutes or until the onions have softened.
  2. Add in the thyme, sundried tomatoes, diced fresh tomatoes and saute for another 3 minutes. Add in half the stock and cook till the tomatoes have softened about 15 minutes.
  3. Turn off the heat. Using a hand blender, blend till the tomatoes have pureed. Add in the remaining stock. Adjust for seasoning by adding sugar, salt and pepper. Keep aside.
  4. When you are ready warm the soup. Add in the cream. Pour the soup into a bowl and decorate with additional sundried tomatoes and serve.
