Tea and Tomato Consommé

Ingredients to make Tea and Tomato Consommé

  • 4-5 medium sized Tomatoes, chopped
  • 600 ml water
  • 1/2 tsp Tea
  • 1 tsp Salt (According to taste)
  • 2 tsp Sugar (According to taste)
  • Coriander leaves to garnish

How to make Tea and Tomato Consommé

  1. Combine the tomatoes and water in a saucepan and cook till the tomatoes are soft. Mash inside the saucepan with a potato masher till the tomatoes are mashed and give out their juices.
  2. Now add the tea and lower the heat. Leave to infuse for 7-10 minutes till the flavours of the tea combine with the tomatoes.
  3. Strain the contents to extract the clear, infused liquid. Pour it back into the saucepan and add salt, sugar and pepper powder. Stir for 2-3 minutes and take it off the heat. Leave it to cool a bit.
  4. Ladle into soup bowls. Top with a Coriander leaf and serve warm.
