ABOUT Zucchini Lasagna RECIPE

Zucchini Lasagna is a perfect main course dish for summer. I am sure you would not miss noodles in this recipe. Zucchini helps in lowering the cholesterol levels, weight management and prevent cancer. Lasagna can be made with any other veggies or meat too

Ingredients Serving: 2

  1. 2 Large Zucchini (Cut lengthwise in very thin slices)
  2. Salt to taste
  3. Black Pepper Powder to taste
  4. 1.5 Cups Pasta Sauce
  5. 1 Onion (chopped)
  6. 1.5 tbsp Basil (chopped)
  7. Olive Oil, as required
  8. 1 tbsp fresh Oregano (chopped)
  9. 1 Cup Mozzarella Cheese (grated)
  10. 1/2 tsp Minced Garlic
  11. 1 cup cottage cheese grated

Instructions

  1. Arrange the zucchini slices on a colander and sprinkle little salt on it, Rest for 30 minutes
  2. Heat oil in a pan. Add chopped onion and minced garlic and saute it till onions turn translucent.
  3. Add pasta sauce and stir it for 2-3 minutes. Add cottage cheese, salt, black pepper, oregano, basil and cook it for another 2-3 minutes.
  4. Rinse off salt from the zucchini and squeeze out water. Heat a little oil in a skillet and cook zucchini slices till they turn lightly brown on both sides.
  5. To assemble lasagna: In a oven safe bowl, spread cooked pasta mix in the bottom.
  6. Now layer zucchini slices over it. Spread some more pasta mix over zucchini slices.
  7. Now sprinkle shredded mozzarella cheese over it. Repeat this process until zucchini and pasta mix is completed
  8. Preheat oven to 180. Bake lasagna for 10-15 minutes and plate it on a serving plate.
  9. Garnish it with chopped basil.
