Want to get more greens into your family's food menu? Why not in form of dessert!! Try this perfect green spinach cake (not use ANY food colouring) and I bet you won't regret it! In fact this will be a keeper for sure. It's super moist, not too sweet, so goes well with any frosting..!!

Ingredients Serving: 6

  1. Spinach leaves 160 gm
  2. Banana 1/2
  3. Sugar 1/2 cup + 1 tbsp
  4. 1/4 cup olive oil (light or extra light preferably)
  5. Vanilla extract 1/2 tsp
  6. Lemon juice 1 tbsp
  7. 1 egg ( or 1tbsp flaxseed meal + 3tbsp water, if want to make it eggfree)
  8. All purpose flour 1 cup
  9. Baking Powder 1 Tsp
  10. salt 1/4 tsp
  11. Topping: sweetened whipped cream 1 cup

Instructions

  1. In a bowl sift flour, baking powder and salt. Set aside.
  2. Mix flaxseed meal and water. Keep aside.
  3. Remove thick stems from spinach. Puree spinach leaves in mixer grinder.
  4. Add in same mixer jar 1/2 banana, vanilla extract, lemon juice, sugar, oil and egg (or flax egg) and pulse few times.
  5. Pour this spinach mixture over the flour mixture and gently fold in, until just combined. Pour into greased 8*2" baking pan.
  6. When cool completely top with whipped cream.
