ABOUT carrot methi rice RECIPE

this rice recipe is made from sauteed carrots and fresh fenugreek leaves

Ingredients Serving: 2

  1. for making rice-
  2. 1/2 cup washed and soaked rice (soak rice for 5-10 minutes)
  3. 1 bayleaf
  4. 1 green cardamom
  5. 1 black cardamom
  6. 4 cloves
  7. 1/2 tsp salt
  8. 3-4 cups water
  9. for making carrot methi rice-
  10. 1 1/2 cup cooked basmati rice
  11. 1 tsp oil
  12. 1 tsp oil
  13. 3-4 cashews
  14. 8-10 raisins
  15. 1 tsp cumin seeds
  16. 1 onion finely chopped
  17. 2 green chillies
  18. 3/4 cup grated carrots
  19. 1/2 tsp garam masala
  20. salt to taste
  21. 3/4 cup fresh fenugreek leaves chopped
  22. 1 tbsp chopped coriander leaves

Instructions

  1. for making rice-
  2. heat water in a bowl. add bayleaf, green cardamom, black cardamom and cloves
  3. when it starts boiling add salt and rice
  4. cook the rice stirring occasionally
  5. once cooked, drain the excess water and let the rice cool completely
  6. for making carrot methi rice-
  7. heat oil and ghee in a kadhai
  8. fry cashews untill brown, then remove into a bowl
  9. fry raisins in the same way
  10. in the same pan, add cumin seeds
  11. when it starts crackling add onion and chillies
  12. saute until lightly browned
  13. now add carrots
  14. sprinkle salt and garam masala, saute for 3-4 minutes
  15. next add fenugreek leaves and mix nicely
  16. saute till it shrinks and raw taste of carrots and fenugreek leaves goes
  17. add cooked rice, fried cashews and raisins, mix well
  18. add coriander leaves and switch off the flame
  19. relish the tasty rice as such or with raita
