Chilled Cucumber Soup

Ingredients to make Chilled Cucumber Soup

  • cucumber - 1 and 1/2 cup, peeled and cut into cubes
  • curd - 1 cup
  • garlic Clove - 1
  • onion - 1 medium, chopped
  • lime Juice - 1 teaspoon
  • salt to taste
  • Black pepper Powder - 1 teaspoon
  • A few drops of olive oil
  • mint leaves for garnishing
  • cucumber Roundales to garnish

How to make Chilled Cucumber Soup

  1. In a blender, take all the ingredients (except the black pepper powder mint leaf) and make a smooth puree.
  2. Now pour the puree in a bowl and sprinkle in some black pepper powder.
  3. You can place the soup in the refrigerator or you can use ice cubes if you want to serve it immediately.
  4. After half an hour, take out the soup from the fridge and garnish it with mint leaves and cucumber roundales and serve it chilled.
