Italian Minestrone Soup

Ingredients to make Italian Minestrone Soup

  • 1 tbsp olive oil or butter
  • ¼ tsp mixed herbs
  • ½ tsp pepper and salt to your taste
  • ½ tsp sugar
  • 2 tbsp baked beans (tinned) or ½ cup boiled rajma beans
  • 3 medium tomatoes grated
  • 2tbsp celery chopped
  • Broccoli chopped 2 Tbsp
  • 2 tbsp zucchini chopped finely
  • Babycorn sliced thinly 2 tbsp
  • 1tbsp carrots chopped finely
  • 1 onion chopped finely
  • 2 flakes of garlic chopped
  • 2 tbsp macroni pasta (boiled)
  • 5 cups of water
  • 2 tsp cornflour mixed with 2 tbsp water
  • 2 tbsp grated cheese to garnish

How to make Italian Minestrone Soup

  1. Heat olive oil or butter in a pan, add garlic and onion and saute for a while. Add all the veggies along with the grated tomatoes and beans saute for a while, then add water and cook till the water comes to a boil.
  2. Now add salt, pepper, mixed herbs, sugar and add the cornflour paste slowly and keep stirring to prevent lump formation. In the end add grated cheese and boiled macaroni.
  3. Serve hot with any bread of your choice.
