ABOUT CORN CORIANDER PANKI RECIPE

Panki is batter cooked in banana leaves. It's a Gujarati delicacy having lots of variations. Served steamed hot as snacks. This recipe is prepared with batter of sweet corns and fresh green coriander leaves.

Ingredients Serving: 8

  1. Sweet corn kernels 1 cup
  2. Gram flour 1/4 cup
  3. Semolina 1 tbsp
  4. Green coriander leaves 1/2 cup
  5. Ginger 2"
  6. Green chilies 4
  7. Salt 1 tesp
  8. Turmeric powder 1/4 tesp
  9. Eno salt 1 tesp
  10. Water 1-2 tbsp
  11. Banana leaves
  12. Oil to grease banana leaves

Instructions

  1. WE NEED CORN KERNELS, GRAM FLOUR, SEMOLINA, GREEN CORIANDER, SALT, TURMERIC POWDER, ENO SALT
  2. GRIND 1 CUP CORN KERNELS TO FINE PASTE WITHOUT WATER.
  3. GRIND 1 CUP CORN KERNELS TO FINE PASTE WITHOUT WATER.
  4. MIX TOGETHER CORN PASTE, 1/4 CUP GRAM FLOUR, 1 TBSP SEMOLINA, 1/2 CUP CHOPPED CORIANDER LEAVES.
  5. ADD 1 TBSP GINGER AND GREEN CHILIES PASTE, 1 TESP SALT AND 1/4 TESP TURMERIC POWDER.
  6. MIX.
  7. ADD 1-2 TBSP WATER IF NEEDED TO MAKE A SMOOTH BATTER.
  8. ADD 1 TESP ENO SALT AND MIX.
  9. CUT BANANA LEAVES IN DESIRED SHAPE AND SIZE, GREASE THEM.
  10. HEAT A PAN. SLOW DOWN THE HEAT. PLACE BANANA LEAVES ON HOT PAN WITH GREASED SIDE UP.
  11. PUT LITTLE BATTER ON LEAVES AND COVER WITH ANOTHER LEAF WITH GREASED SIDE FACING DOWN.
  12. PRESS LIGHTLY TO SPREAD BATTER THIN AND EVENLY.
  13. COOK FOR A MINUTE AND HALF ON LOW,THEN FLIP.
  14. COOK FOR ANOTHER MINUTE.
  15. CHECK IF BANANA LEAF EASILY PEELS OFF WITHOUT STICKING IT'S DONE.
  16. REMOVE FROM PAN AND SERVE STEAMING HOT.
