Blend ginger and garlic into fine paste.
Heat oil in a non-stick pan. Splutter cumin and mustard seeds
Add crushed garlic and chopped green chili. Stir for few seconds.
Add turmeric and asafoetida. Stir well
Add ginger garlic paste. Cook till raw aroma goes away.
Add finely chopped spinach. Mix well. Cover and cook till spinach wilts over low medium flame.
Meanwhile whisk curd well. Add 3/4 cup water and gram flour. Whisk well to form smooth slurry.
Pour this mixture slowly into pan. Keep stirring continuously and cook for few minutes
Add salt and sugar. Stir and cook for 3-4 minutes. If its too thick , add water to adjust the consistency.
Serve hot with rice.
