ABOUT Dahi Palak Curry RECIPE

It is a super food loaded with lots of nutrients in a low-calorie package. Spinach is used is many dishes or tossed into salads with other leafy vegetables. It is healthy and nutritious vegetable has lots of medicinal benefits. It consists of protein, fiber, vitamins, thiamin, vitamin B6, folate, calcium, iron, magnesium, phosphorus, potassium, copper, and manganese.

Ingredients Serving: 4

  1. Spinach finely chopped – 1 cup tightly packed.
  2. Curd – 1.5 tbsp
  3. Gram flour – 1/2 tbsp
  4. Cumin seeds – 1/2 tsp
  5. Mustard seeds – 1/2 tsp
  6. Garlic clove– 1 tempering + 3 for paste
  7. Ginger peeled grated –3/4 tbsp.
  8. Green chili slit – 1
  9. Turmeric – 1 tsp
  10. Asafoetida – 1/4 tsp
  11. Sugar – 1/8 tsp
  12. Salt as per taste
  13. Oil – 1 tbsp
  14. Water as required to adjust consistency.

Instructions

  1. Blend ginger and garlic into fine paste.
  2. Heat oil in a non-stick pan. Splutter cumin and mustard seeds
  3. Add crushed garlic and chopped green chili. Stir for few seconds.
  4. Add turmeric and asafoetida. Stir well
  5. Add ginger garlic paste. Cook till raw aroma goes away.
  6. Add finely chopped spinach. Mix well. Cover and cook till spinach wilts over low medium flame.
  7. Meanwhile whisk curd well. Add 3/4 cup water and gram flour. Whisk well to form smooth slurry.
  8. Pour this mixture slowly into pan. Keep stirring continuously and cook for few minutes
  9. Add salt and sugar. Stir and cook for 3-4 minutes. If its too thick , add water to adjust the consistency.
  10. Serve hot with rice.
