Ivy gourd contains beta-carotene, a major Vitamin A source, Vitamin C and lowers the blood sugar level. A simple yet appetising recipe with the this green vegetable to relish the meal.

Wash and chop off the ends of the Ivy gourds. Steam the ivy gourds for 4 minutes.
Dry roast peanuts and remove from the pan, next add sesame seeds, when it sputters remove from heat. At the last roast the grated coconut lightly.
Allow the roasted ingredients to cool down and grind it into a fine paste by adding enough water.
Now cut the steamed Ivy gourds into roundels
In a heavy bottom pan heat the oil. Add mustard seeds, when it starts to splutter add urad dal, cumin seeds and curry leaves.
Next add onions and saute till it turns translucent.
Add ginger garlic paste , saute till raw aroma disappears
Now add spice powders and mix well. Add in ivy gourd and mix
Add 1/2 cup water and salt. Cover and cook for 5 minutes stirring in between
Add ground paste and mix well
Remove from heat and serve hot with rice or chapati.
