Sweet and Sour Vegetable tomato soup

Ingredients to make Sweet and Sour Vegetable tomato soup

  • 4 1/2 cups water
  • 6 cups shredded cabbage
  • 2 cups onion diced
  • i cup sweet corn
  • 1 1/2 cups diced tomatoes, undrained
  • 1/2 cup tomato sauce
  • 1 tablespoon brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons golden raisins
  • 1 tablespoon fresh lemon juice
  • 1/2 cup sour cream (optional)
  • 4 teaspoons grated lemon rind (optional)
  • 1 cup green capsicum diced

How to make Sweet and Sour Vegetable tomato soup

  1. In a saucepan, bring water to a boil.
  2. Add cabbage, capsicum, sweet corn, onion and tomatoes.
  3. add 1/4 teaspoon freshly ground black pepper, 1/4 teaspoon salt,1 tablespoon brown sugar,1/2 cup tomato sauce and cover the pan with the lid and bring it to boil.
  4. Cover, reduce heat, and simmer for 15 mins, stirring occasionally.
  5. Stir in raisins and lemon juice.
  6. Simmer, partially covered, 15 minutes.
  7. Top soup with sour cream and rind(optional).

My Tip:

ensure pieces of vegetables are of a roughly equal size so that you don’t have some pieces overcooked, and others undercooked.
