ABOUT Labra RECIPE

Labra ia a popular Bengali mix vegetables curry which is mainly served with khichuri.Labra along with khichuri ,tomato chutney offered to God .

Ingredients Serving: 2

  1. Pui shak or Malabar spinach leaves-1 cup (chopped)
  2. Malabar spinach tender stems-1/2 cup (chopped)
  3. Raddish-1 (cut into small cubes)
  4. Raw banana stem-1 cup (cut into small cubes)
  5. Long beans- 4 cut into small pieces
  6. Pumpkin-1 cup cubed
  7. Potato-1, cubed
  8. Brinjal-1/2 , cubed
  9. Parwal- 2 ,cut into small pieces
  10. Salt to taste
  11. Sugar- 1/2 tsp
  12. Red chili-1
  13. Ginger paste-1 tsp
  14. Turmeric powder-1 tsp
  15. Red chili powder-1 tsp
  16. Cumin powder-1 tsp
  17. Bay leaf- 2
  18. Panch phoron-1 tsp
  19. Oil- 1/4 cup (preferably mustard oil)
  20. Bhaja masala- 1 teaspoon (roast 1 dry red chili , 1 tsp cumin powder and grind to a fine powder)

Instructions

  1. Mix ginger paste,red chili powder,turmeric powder and cumin powder in a cup with little bit oil to make masala paste
  2. Heat oil in a pan
  3. Temper the oil with bay leaf,red chili and panch phoron
  4. Add the masala paste,mix and saute for 1 minute
  5. Add chopped tomatoes ,saute until tomatoes are tender
  6. Add all vegetables ,mix and saute for 2 minutes
  7. Add chopped Malabar spinach and mix well
  8. Add salt and sugar. Mix and cook until veggies are half done
  9. Add 1/2 cup water and bring to boil
  10. Cover and cook until the vegetables are done and all water has dried up
  11. Add bhaja masala,mix well
  12. Serve hot
