Pumpkin Brioche

Ingredients to make Pumpkin Brioche

  • For the base:
  • 1 cup warm milk
  • 30 grams yeast
  • 1/4 cup honey or maple syrup
  • 2 cups flour
  • For the dough:
  • 1/2 cup brown sugar packed
  • 4 tsps salt
  • 1 cup roasted pumpkin puree
  • 150 grams butter
  • 2 cups flour
  • 1 tsp cinnamon
  • 1/2 tsp ginger powder
  • 1/4 tsp cloves
  • 8 eggs
  • 1 additional egg for the egg wash

How to make Pumpkin Brioche

  1. Make the base first by adding milk, yeast and honey together until frothy. Add in the flour. Mix well and keep aside for 1 hour or until doubled in size.
  2. Add brown sugar, pumpkin, eggs, cinnamon, ginger, cloves and salt to this mix and knead well with the addition of te flour
  3. Add bits of butter and keep kneading until the dough is shiny almost 15 minutes.
  4. Coat oil in a non-stick pan. Turn the dough. Cover and keep aside for an additional hour.
  5. Pinch together balls of dough and form a loaf. Brush with egg wash. Bake at 250 degree centigrade for about 30 minutes
