ABOUT Anpan RECIPE

A Japanese sweet bread with a sweet red bean paste in the filling enjoyed as a snack.

Ingredients Serving: 2

  1. 200ml Milk
  2. 250g Bread Flour
  3. 60g Cake Flour
  4. 30g Butter
  5. 10g Milk Powder
  6. 5g Dry Yeast
  7. 30g Sugar
  8. 1/2 tbs Salt
  9. Egg Wash ( 1 egg mixed with sesame seeds)
  10. 1 cup Red Beans
  11. 1 1/2 cup Sugar
  12. Water as needed

Instructions

  1. Preheat oven to 200 degree celcius.
  2. Warm the milk to lukewarm and mix it with yeast and sugar in a bowl.
  3. Mix bread flour and cake flour together. Add the milk mixture , milk powder and salt to it to make a dough..
  4. Add the butter and knead for another 5 minutes. Cover and let it rest for 1 hour to double the volume size.
  5. Boil 2 cups of water and put red beans in for 5 mins.
  6. In a pot red beans and 2 cups of water and let it simmer for 2 hours to soften the beans
  7. In another pot put the beans and sugar over medium heat and stir for 10 mins to make a paste (Anko)
  8. Make small balls of the paste. Place the dough in a cutting board and cut into 8 pieces and make each piece into balls.
  9. Flatten a ball of dough and place a ball of anko int the centre. Wrap the dough around and pinch the edges. Repeat for the remaining balls of dough and anko.
  10. Place each An pan on a baking sheet, brush egg wash on each and sprinkle red bean paste on top. Leave for an hour to double its size.
  11. Bake in oven for 10-15 mins.
