Basale or malabar spinach is a beautiful , supple green that is pretty common along the coastal regions of karnataka, particularly Mangalore. But its also really flavourful. Both the leaves and stalks can be used for curries. The seafood loving folk of Mangalore often add prawns or mussels to the gravy for even more depth of flavour, but the purely vegetrian version is lip smacking on its own and a great accompaniment to boiled or steamed rice.
Simple yet delicious.
Clean and finely chop spinach leaves. Chop spinach stalks into bite sized or half finger length pieces .
Pressure cook stalks with dal , salt , turmeric and 1 cup water over low flame for 3 whistles
Heat oil in a pan. Add red chili , mustard, coriander and cumin seeds. Saute for 3-4 minutes
Grind the above spices with coconut, garlic , onion and tamarind into a fine smooth paste.
Once steam is released , add ground masala paste with spinach leaves to cooker and cook over medium heat .Add salt and mix well. Bring to boil
Simmer and cook for 10 to 15 minutes. Adjust seasonings if required
Serve hot with rice.
