Ingredients Serving: 2

  1. FOR CURRY:
  2. 2 cups chopped spinach leaves
  3. 3 cups water
  4. 1 tablespoon ghee
  5. 1 tejpatta
  6. 1/2 teaspoon cumin seeds
  7. 1/2 cup chopped onions
  8. 1/2 cup Chopped tomatoes
  9. 1 tablespoon ginger garlic paste
  10. 1/2 cup water
  11. Salt to taste
  12. 1/2 teaspoon red chili powder
  13. 1/4 teaspoon turmeric powder
  14. 1/2 teaspoon garam masala
  15. 2 tablespoon cream
  16. For egg roast:
  17. 3-4 eggs, boiled
  18. 1 teaspoon ghee
  19. 1/4 teaspoon red chili powder
  20. 1/2 teaspoon salt
  21. 1/2 teaspoon cumin seeds

Instructions

  1. Boil 3 cups water. Add spinach leaves and cook for around 10 minutes.
  2. Cool the leaves and blend with 1/2 cup water to form smooth puree
  3. Heat 1 tablespoon ghee in a pan.Add tejpatta and cumin seeds and saute for few seconds
  4. Add ginger garlic paste , Saute until raw aroma disappears
  5. Add chopped onions. Saute till onions are translucent.
  6. Add tomatoes and mix well. Saute until tender
  7. Add salt, red chili powder, turmeric powder and garam masala. Mix well.
  8. Add palak puree and mix well
  9. Simmer, cover and cook for 5-7 minutes.
  10. Add cream and mix well. Cook for 2 minutes.
  11. Heat 1 teaspoon ghee in a pan . Add salt, red chili powder and cumin seeds and mix well
  12. Add eggs and roast well until golden brown
  13. Cut eggs in halves and add to palak curry. Serve hot
