Ingredients to make Mushroom Pie

  • 150 gms puff pastry
  • ½ cup mushrooms, sliced
  • 1 small onion, chopped
  • 1 spring onion, chopped
  • 2-3 cloves of garlic, minced
  • 2 tbsp celery, chopped fine
  • 1 tbsp flour
  • 100 ml milk
  • 2 tbsp cream
  • 2 tbsp olive oil
  • 1 tbsp butter
  • ½ tsp mustard powder
  • Salt and pepper

How to make Mushroom Pie

  1. Heat the olive oil in a pan, saute the garlic and onions. Once they become transparent and soft, add the mushrooms and celery, cook till soft.
  2. Sprinkle flour over the vegetable mix and fold it all together, let is cook on a low flame for 2-3 mins.
  3. Pour in the milk and cream, let it begin to thicken, season with mustard powder, pepper and a salt. Take off the gas and add the cheese.
  4. Fill two ceramic pie moulds with the cooled mushroom mix. Roll out the puff pastry and use a cookie cutter to cut a circle to cover the top of the filling.
  5. You can make a crispy topping with any small shape for more pastry for the filling.
  6. Bake at 200C for 4-5 minutes or till the pastry is evenly brown and crisp, serve hot.

My Tip:

You can make this filling with diced cauliflower or even a combination of peas and potatoes. To make it non. vegetarian, add sliced ham, bits of pepperoni or lightly fried bacon to the sauce.
