Shirazine Mutton Curry

Ingredients to make Shirazine Mutton Curry

  • 500 gms mutton, boneless
  • 2-3 red onions, pureed
  • 4-5 cloves of garlic
  • 1 tbsp ginger, paste
  • 4 tbsp tomato puree
  • 4 tbsp ghee
  • 1 tbsp cumin powder
  • 1 tbsp coriander powder
  • 1 tbsp red chilli powder
  • 1 tsp garam masala
  • 200 ml warm water
  • Salt to taste
  • Fresh coriander to garnish

How to make Shirazine Mutton Curry

  1. Heat the ghee in a pressure cooker and saute the ginger and garlic paste for 2 minutes till it is fragrant. Add the pureed onions and saute for 6-7 minutes till the mixture begins to brown evenly.
  2. Now add in the mutton pieces and coat evenly. Braise it on a medium flame till the meat gets a bit of colour. Add the cumin, coriander and red chilli powder along with a tbsp of warm water.
  3. Let it fry for a minute or two or till the ghee separates, add the tomato puree and warm water and cook on low heat for 30 minutes.
  4. Check to see if the meat is done. Add the garam masala and pressure cook for 2 whistles or 4-5 minutes.
  5. Garnish with fresh coriander and serve hot with white rice.
My Tip: To cook the chicken version, reduce the cooking time to 20-25 mins depending on the size of the chicken.
