Ingredients Serving: 4

  1. 1 cup spinach
  2. 1 cup mustard leaves
  3. 1 cup chenopodium leaves (bathua)
  4. 2 tomato, chopped
  5. 1 Onion, chopped
  6. 6-7 Garlic cloves, minced
  7. 2-3 green chili, chopped
  8. 1/4 tsp cumin seeds
  9. 1 Pinch Hing
  10. 2 tbsp oil + oil frying
  11. 4 potatoes
  12. 2 tbsp corn starch
  13. 2 cup grated Cottage cheese
  14. Salt to taste
  15. 1 tsp Chat masala

Instructions

  1. Wash and roughly chop leafy vegetables
  2. Add leafy greens in a pan with salt and stir. Cook until leaves wilt
  3. Cool the mixture and blend to smooth puree
  4. Grind chopped tomatoes , onion and garlic cloves to fine paste.
  5. Heat 2 tbsp oil in a pan. Add cumin seeds and hing.Saute for 1 minute. Add tomato onion paste and salt. Mix well. Saute until mixture starts leaving oil
  6. Add in green puree and mix well. Cook for 10 -12 on medium slow flame .
  7. In a bowl, add grated cottage cheese and mix with salt and chat masala. Mix corn starch with water in a bowl to make slurry
  8. Boil the potatoes until half done. Peel and cut potatoes in halves. Scoop out the flesh of potatoes
  9. Now fill grated cheese masala in potatoes .
  10. Now dip the top portion of potatoes in corn starch slurry
  11. Deep fry the potatoes until its golden brown and tender
  12. Add fried potatoes in green gravy and cook for 5 mins. Serve hot with roti , kulcha , rice.

Pls complete the receipe and don't spoil the original receipe of Sanjeev Kapoor. It was his legendary receipe.
