About Cashew Kheer

The inspiration to prepare this came from my sister who successfully impressed her guests with this preparation as it's less common compared to Badam Kheer.

Cashew Kheer

Ingredients to make Cashew Kheer

  • 1.5 litres milk
  • Sugar
  • 75 gms cashewnuts
  • a few saffron strands

How to make Cashew Kheer

  1. Soak around 75 gms cashew in hot water for 10 min. Meanwhile keep 1.5 litres full cream milk on a stove to boil. Leave the milk to simmer for another 10 min in low flame
  2. Add a few strands of saffron to the milk when it is being bolied. Add app 8 to 9 tablespoons sugar
  3. Once milk simmers for some time , grind the soaked cashews in a mixer and add the finely ground paste to this boiling milk
  4. Keep for another 2 to 3 minutes and turn off the gas
My Tip: There is no need to use full cream milk. One can use low fat milk as well. It can be served chilled or hot as it tastes good both ways.
