Ingredients Serving: 6

  1. 1,1/2 cups sooji( Semolina) #Forgarnish 1 tbs green pistachios silvered 1 tbs pomegranate seeds
  2. 1/2 cup Ghee
  3. 3/4 cup sugar
  4. 2 cups hot milk
  5. 1 cup hot water
  6. 1/2 tsp Cardamom powder
  7. 1 tbs chopped cashew
  8. 1 tbs green pistachio silvered
  9. 2 tbs pomegranate seeds
  10. FOR GARNISH
  11. 1 tbs green pistachio silvered
  12. 2 tbs pomegranate seeds

Instructions

  1. Heat ghee in a deep heavy based pan over medium flame.
  2. When the ghee melts,add the sooji and stir to mix well.Same time boil milk and water in a another pot.
  3. Add sugar and cardamom powder. When milk start boiling turn off the flame and keep aside.
  4. In between keep stirring the sooji. Roast in until very light brown colour and good aroma comes out.
  5. It takes 7 to 10 minutes. Reduced flame to low and slowly add boil milk mixure into the sooji ( careful add mixure otherwise steam hurt your hands).
  6. Mix by stirring constantly. Stir and cook to avoid any lumps formating.
  7. After cover and cook on slow flame until all water gets absorbed and sooji starts to leave the edge of the pan.
  8. Add pistachio and pomegranate seeds, mix well and turn off the flame.Garnish with rest pistachios silvered and pomegranate seeds.Serve and Enjoy.
