ABOUT Mutton Ghee Roast RECIPE

This is My husband's favorite recipe ,he used to ask to prepare, so i learn from one of my friend and online too.. when i prepare this recipe adding with my own style i comes very well..you can thave it as a stater/side dish.Even you can have it with roti/chapati/parathas as your choice..please prepare it and let me know how it come.

Ingredients Serving: 4

  1. Mutton - 1
  2. Ginger & garlic paste - 2 tbsp
  3. Turmeric powder - 1 tbsp
  4. Ghee - 3-4 tbsp
  5. Curd - 1/2 cup
  6. Cumin seeds - 1 tbsp
  7. Coriander seeds - 1 tbsp
  8. Cinnamon stick - 2 small piece
  9. Clove - 4-5 no
  10. Star Anise - 1 no(optional)
  11. Green cardamom - 5 no
  12. Fennel seeds - 1 tbsp
  13. Pepper - 2 tbsp
  14. Dry red chili -4-5 no
  15. Kashmir red chili(for color) - 5-6 no
  16. Tamarind paste/tamarind extract -2 tbsp
  17. Garlic cloves - 10-12 no
  18. Curry leaves - 1 string
  19. Salt as per taste
  20. Water -2 cup

Instructions

  1. Wash the mutton properly and take it into a bowl, then add the ginger and garlic paste, turmeric powder,curd and salt as per taste and mix it properly then leave it to rest for 1-2 hour.
  2. After 2 hour we will start cooking, take a pressure cooker and heat 2 tbsp of ghee then add the marinated mutton and saute it for few minutes till the mutton start release the ghee. keep sauteing with low flame.
  3. Then add the 2 cup of water into the mutton and mix it once then close the lead and let it cook for 4-5 whistles.
  4. After that we will prepare the masala for that take a pan add all the dry spices(cumin seeds,coriander seeds,cinnamon stick,cloves,black pepper,chili,fennel seeds,star anise,green cardamom) .
  5. Then saute it for few minutes until the nice aroma will coke, keep frying continuously otherwise it will burn.
  6. Then switch off the flame and transfer all the roasted masala into a blender, add the garlic cloves,tamarind paste, add very little water and grind it to make a thick and fine paste.
  7. Now take the pan add 2-3 tbsp of ghee,once the ghee is hot then add the masala paste and saute it nicely with ghee in low flame for 5 minutes.
  8. Then add the cooked mutton into the masala and mix it very nicely ( just check the salt if need you can add little). Finally add the curry leaves and mix it nicely and switch off the flame.
  9. Now your delicious Mutton Ghee Roast is ready to eat. Serve hot with rice/ roti and enjoy.
