About Cream of Broccoli soup Recipe

Cream of Broccoli soup

Ingredients to make Cream of Broccoli soup

1 tbsp oil
2 onions ( chopped )
3 garlic cloves ( chopped )
2 big florets of Broccoli (diced)
3 cups Vegetable stock
2 cups Milk
Salt and black pepper to taste

How to make Cream of Broccoli soup

In a heavy bottom pan, sauté the onion till it is translucent.
Next, add garlic and cook till it turns soft. Then add the broccoli and vegetable broth, cook on a medium flame till the broccoli turns soft.
Pour in milk and boil it properly. Then let it cool for a while.
Pour this soup into a blender and blend till it is very smooth.
Add salt and pepper as per taste and give it a boil.
Serve hot.

My Tip:

You can add cream after blending it if you want the soup to be of a thicker consistency.
