Cream of Broccoli soup

Ingredients to make Cream of Broccoli soup

  • 1 tbsp oil
  • 2 onions ( chopped )
  • 3 garlic cloves ( chopped )
  • 2 big florets of Broccoli (diced)
  • 3 cups Vegetable stock
  • 2 cups milk
  • Salt and black pepper to taste

How to make Cream of Broccoli soup

  1. In a heavy bottom pan, sauté the onion till it is translucent.
  2. Next, add garlic and cook till it turns soft. Then add the broccoli and vegetable broth, cook on a medium flame till the broccoli turns soft.
  3. Pour in milk and boil it properly. Then let it cool for a while.
  4. Pour this soup into a blender and blend till it is very smooth.
  5. Add salt and pepper as per taste and give it a boil.
  6. Serve hot.

My Tip:

You can add cream after blending it if you want the soup to be of a thicker consistency.
