ABOUT Cardamom Panna Cotta RECIPE

Here is a simple and easy recipe for making cardamom panna cotta. Panna cotta is an Italian dessert. Cardamom, being one of India's major and inevitable spice, has numerous medicinal benefits and is used in many Indian sweets and curries. This fusion dessert balances the flavors well. This creamy and luscious dessert is topped with caramelized coconut and pistachios with a subtle rose flavor. Cardamom panna cotta is egg-less too. Serve cold, and enjoy the divinely delicious scoops.

Ingredients Serving: 6

  1. Milk 1 and 1/2 cups
  2. Fresh cream 1 and 1/2 cups
  3. Freshly powdered cardamom 1 tsp
  4. Sugar 1/2 cup
  5. Gelatin 2 and 1/2 tsp
  6. For the caramelized coconut topping:
  7. Grated Coconut 1/2 cup
  8. Sugar 1/2 cup
  9. Rose essence 1/4 tsp
  10. Pistachios 1/4 cup

Instructions

  1. First boil milk.
  2. Then allow it to cool down to room temperature.
  3. Then sprinkle gelatin over the milk and allow to rest for 5 minutes.
  4. Next dissolve the gelatin in milk
  5. Add sugar and mix well.
  6. Next warm the milk slightly for 1-2 minutes. Do not boil.
  7. Switch the flame off, and allow to cool down.
  8. Next add the fresh cream and powdered cardamom to the cooled milk mixture and blend well in a blender.
  9. Transfer the contents to moulds.
  10. Refrigerate overnight.
  11. To prepare the caramelized coconut topping:
  12. Remove water/ coconut milk from coconut by squeezing in a muslin cloth.
  13. Heat sugar in a pan without stirring.
  14. Once the edges begin to brown, swirl the pan to caramelize uniformly.
  15. Then add in the grated coconut and pistachios and sir well for 1-2 minutes.
  16. Add the rose essence and mix well.
  17. Switch the flame off.
  18. Transfer the contents to a greased baking tray/ parchment paper.
  19. Once it cools, crush in a grinder. (Just one pulse will do).
