This smooth, creamy, flavoursome soup is an ideal one to feel fuller and a perfect start to any lavish dinner. Indianised with the humble Saffron and roasted cumin powder makes this soup even more tastier.

Ingredients Serving: 2

  1. Pumpkin puree - 1 cup
  2. Vegetable broth / water - 2 cups
  3. Saffron - 1/4 tsp
  4. Milk - 1 cup
  5. Chopped onion - 2 tbsps
  6. Chopped garlic - 1 tbsp
  7. Butter - 1 tbsp
  8. Cumin powder - 1/2 tsp
  9. Oregano - 1/2 tsp
  10. Pepper powder - 1/2 tsp
  11. Salt to taste
  12. Fresh cream - 2 tbsps

Instructions

  1. Soak saffron in the milk
  2. Add butter to a sauce pan
  3. As it froths add the cumin powder.
  4. Now add the chopped onions and saute for few minutes.
  5. Add the garlic and keep stirring. Now add the pumpkin puree. Saute.
  6. Add the oregano, pepper and salt. Mix well. Add the broth
  7. Let it come to a rolling boil. Now lower the flame and simmer uncovered for around 20 minutes.
  8. Cool and blend. Keep it again to heat.
  9. Add the saffron milk and cook for 2 to 3 minutes. Adjust consistency if required.
  10. Add fresh cream, mix and further keep on low flame for few minutes.
  11. Garnish with pinch of oregano, saffron strands and fresh cream
  12. Serve immediately.
