ABOUT Gingelly Brinjal or Oily Brinjal RECIPE

Delicious side dish for briyani or any otherPulav. This dish is made using roasted gingelly seeds,tamarind and some spices.Vey popular and comforting dish in south India.

Ingredients Serving: 4

  1. Brinjal -300 gm
  2. gingelly /black sesame seeds - 2 tbsp (roast and grind)
  3. gingelly oil -4 tbsp
  4. shallots - 50 gm
  5. tomato -50 gm
  6. mustard, urad dal,fenugreek,pepper - each 1/2 tsp
  7. Turmeric Powder - 1/4 Tsp
  8. chilli powder & coriander powder - each 1 tsp
  9. pepper,cumin,fennel powder - each 1/2 tsp
  10. Tamarind - small lemon size
  11. Curry leaves - 2 arc
  12. Salt - taste

Instructions

  1. Wash remove the stem of brinjal, split cut and keep aside.
  2. Roast the gingelly seed (black sesame seed) and powder it.
  3. Grind onion and tomato to coarse paste.
  4. Soak and extract the tamarind juice in half cup water.
  5. In a heavy pan heat oil, add mustard,split urad dal,fenugreek and pepper.when it slightly fried add curry leaves.
  6. Add brinjal ,saute well.Close and leave it medium flame for few minutes till soft.
  7. Add coarsely blended onion,tomato mix well.Add all masala powders mentioned above. Stir well.
  8. Add tamarind water and let it boil for 5 minutes.
  9. Add black gingelly seed powder. Mix well and cook in a low flame till oil oozes out.
  10. Mix and transfer to a bowl serve with Briyani or Pulav.
