ABOUT Sprouted fenugreek pickle RECIPE

Sprouted fenugreek pickle is delicious as well as beneficial for digestion. It can be served with poori or parantha.

Ingredients Serving: 6

  1. Fenugreek seeds - 1/4 cup
  2. Jaggery - 1 cup
  3. Mustard oil - 2 tbsp
  4. Vinegar - 2 tbsp
  5. Raisins - 2 tbsp
  6. Dates - 5-6
  7. Brown cardamom - 1
  8. Clove - 2
  9. Black pepper - 3/4 tsp
  10. Asafoetida - less than 1/4 tsp
  11. Red chilly powder - 1/2 tsp
  12. Fennel - 1 tsp (coarsely grounded)
  13. Ginger powder(Sonth) - 1 tsp
  14. Cumin powder - 1 tsp
  15. Black pepper - 1 tsp
  16. Salt - 3/4 tsp or as per taste

Instructions

  1. Wash the fenugreek seeds and soak in enough water for overnight.
  2. Take them out from water and place it over a sieve. Now cover with a wet muslin cloth. Within two days these will sprout.
  3. Preheat oil in a pan, add asafoetida and cumin powder into it, add sprouted fenugreek seeds and mix well.  
  4. Now add fennel powder, ginger powder, red chilly powder, plain salt, black salt and 1/2 cup water. Mix everything really well. Cover and cook on low flame for 3-4 minutes. 
  5. Coarsely ground brown cardamom, clove, black pepper and chop dates. Check the fenugreek. Now add sugar and 1/4 cup of water into it and mix well. Cook until sugar melts completely and add raisins,  dry dates and coarsely grounded spices. Now cook until pickle gets thick and dense in consistency.
  6. When pickle gets cooled, add vinegar into it and mix well. Pickle is ready.
