Couscous with Chicken and Vegetables

Ingredients to make Couscous with Chicken and Vegetables

  • 2 cups Couscous
  • 200g Chicken
  • 1 Onion, chopped
  • 1 Red bell pepper, chopped
  • 1/2 Cucumber, chopped
  • 3 1/2 cup Vegetable/Chicken broth
  • 1 tsp Ground Cumin
  • 1 tsp Coriander seeds
  • 1 Lime
  • 1 tsp Ginger and Garlic
  • Olive oil
  • Salt and pepper to taste

How to make Couscous with Chicken and Vegetables

  1. Boil the chicken in a pot of boiling water along with the ginger, garlic, pepper and salt to taste. When cooked, shred into small pieces and keep aside.
  2. Heat about 2 tbsp of olive oil in a saucepan, add onion and saute till the onions become soft, season with salt and pepper.
  3. Add the broth along with cumin and coriander seeds and bring this to boil.
  4. Add couscous and stir well. Cover this and remove from heat. Keep aside for 5 mins.
  5. Remove the lid, fluff the couscous and add the chicken pieces, red bell pepper and cucumber.
  6. Transfer to a serving plate and serve with lime wedges
