ABOUT Methi Chicken RECIPE

Chicken cooked with fresh fenugreek leaves and tempered with fenugreek seeds

Ingredients Serving: 4

  1. Chicken with bone: 700 gm
  2. Fresh methi saag (fenugreek leaves): a bunch
  3. Fenugreek seeds: 1/2 tsp
  4. Dry red chilies: 4-5
  5. Ginger paste: 1 tbsp
  6. Garlic paste: 1 tbsp
  7. Onion (thinly sliced): 1.5 cups
  8. Yogurt: 3/4 cup
  9. Cumin powder: 1 tsp
  10. Coriander powder: 1 tsp
  11. Turmeric powder: 1/2 tsp
  12. Kashmiri red chili: 1 tsp
  13. Garam masala powder: 1 tsp
  14. Salt to taste
  15. Suagr to taste
  16. Oil to cook (mustard oil)
  17. Ghee: 1 tsp

Instructions

  1. Take the leaves of the fresh fenugreek, wash well, drain, keep aside
  2. Wash the chicken pieces, pat dry, keep aside
  3. In a kadhai, heat 3 tablespoons of white oil and add dry red chilies and fenugreek seeds, as the seeds change color add onion, cook onion till brown
  4. Add ginger garlic paste, cook for 2 min
  5. Add cumin, coriander, turmeric, kashmiri red chili powder, cook for 2-3 min
  6. Beat the yogurt with a little sugar and add, mix well. Cook for 4-5 min or till oil separates from the spices.
  7. Add the chicken pieces, salt, mix well. cover and cook for 15 mins. the chicken will release lots of water.
  8. Cook over high heat for 5-6 mins. Add garam masala, a pinch of sugar, fresh fenugreek leaves and ghee. mix well, cook for 3-4 min, serve hot.
