Ingredients Serving: 6

  1. Chicken drumstick: 6
  2. Black pepper powder: 1 tsp
  3. Lime juice: 1 tbsp
  4. Saffron strands: 1 tbsp
  5. Onion juice: 2 tbsp
  6. Dry red chili powder: 1 tsp
  7. Greek yogurt or hung curd: 1/3 cup
  8. Salt to taste
  9. Warm water: 2 tbsp
  10. Melted butter or olive oil for basting the chicken

Instructions

  1. Wash the chicken, pat dry, make few slashes on the flesh with a sharp knife. Rub salt, black pepper, lime juice on the chicken pieces and let marinate for 15 min.
  2. In a bowl warm water, add the saffron strands to the warm water to release the color.
  3. In a large bowl add yogurt, onion juice, saffron dissolved in water, dry red chili powder and mix well. Add the chicken pieces and marinate at least for 2-3 hrs. Overnight marination is recommended.
  4. Pre heat oven at 200C 0r 400F.
  5. Place the chicken pieces on baking rack and grill for 10-12 mins on each side. Baste the chicken pieces with melted butter or olive oil in between.
  6. For last 2-3 min cook the chicken pieces under the highest oven temperature or use the broil option.
  7. To check whether the chicken are cooked or not, take a knife and slash a meaty part of the chicken, if the flesh is white then the chicken is cooked, if it pinkish then the meat need to be cooked for little long.
  8. Let the chicken rest fro 5 mins before serving, serve with salad and chutney of your choice.
