Lima beans or butter beans cooked in a delectable gravy using coconut and groundnuts.

Ingredients Serving: 4

  1. • 250 gms lima beans
  2. • 1 big onion chopped
  3. • 2 tomatoes chopped
  4. • ½ cup grated coconut
  5. • 1 tbsp roasted peanuts
  6. • 3 green chillies chopped
  7. • 5 to 6 garlic cloves
  8. • 2 tsp coriander powder
  9. • 1/4th tsp turmeric powder
  10. • 1 tsp red chilli powder
  11. • 1 tbsp oil
  12. • Juice of 1 lemon
  13. • Salt to taste

Instructions

  1. Preparation:
  2. Grind grated coconut, roasted peanuts, green chillis and garlic to a smooth paste adding little water.
  3. Method:
  4. Heat oil in a pressure cooker; add cumin seeds and let it splutter.
  5. Add chopped onions and sauté until translucent.
  6. Add coriander powder, turmeric and red chilli powder; cook for a minute.
  7. Now add tomatoes and cook until oil separates from masala.
  8. Add the ground masala and cook until oil seperates from the masala.
  9. Add the lima beans, salt and 2 cups of water. Cover and pressure cook until 2 to 3 whistles.
  10. Squeeze juice of 1 lemon; mix well.
  11. Garnish with coriander leaves.
  12. Serve hot with rotis/rice.
