Ingredients Serving: 4

  1. Basmati rice 1/2kg
  2. 3 onion sliced
  3. 2 tomato sliced
  4. 1/2 kg mutton
  5. 1/4 cup finely chopped coriander and mint leaves
  6. 1/2 cup thick curd
  7. 1 inch cinnamon stick
  8. 3 cardamom
  9. 4 cloves
  10. Ginger garlic paste 2 tbsp
  11. 1 star anise
  12. 3 tbsp Oil
  13. 1 to 2 tbsp ghee
  14. Salt to taste

Instructions

  1. Wash the rice and soak for 10minutes
  2. Heat the pan add oil and ghee when oil is hot add whole Haram masala stir for few seconds then add mint and coriander leaves stir
  3. For 1 minute now add sliced onion and fry until brown or for 5 minutes When onion turned into brown color add ginger garlic paste and fry until raw smell evaporate Now add chilli powder and coriander powder stir and add sliced tomatoes and salt fry until tomato soft Now add washed and cleaned mutton pieces and fry for 10 minutes on a low flame After 10 minutes add 1/2 cup water and cook for 5 to 6 whistle or for 30 minutes Mean while boil water in a large vessel add little salt and 2 tsp oil when water start boiling add soaked rice and cook for 5 minutes on high flame after 5 minutes strain the rice and keep aside After 5 whistle switch off the flame when pressure release remove the lid if the masala is to watery reduce it to thick consistency Now add the biriyani masala to cooked rice mix and cook for 5 minutes add fried onions serve with raitha little bit long procedure but taste is yummy thank you happy cooking
