ABOUT ARABIAN OUZI RICE / PARDA PULAO / PARDA BIRYANI RECIPE

Its an Arabian spicy Dish prepared by baking a spacial spicy chicken biryani covered in a spacial dough and in this recipe I will show you how to bake it in a pressure cooker.Its a very good and a spacial dish to be served in a spacial occasion .

Ingredients Serving: 4

  1. Maida 1 cup
  2. Salt to taste
  3. Vegetable oil 5 tbs
  4. yeast 1 tbs
  5. Warm water 1 cup
  6. Rice 300 grms soaked for 20 min in water
  7. Chicken 1/2 kg
  8. onion 1 big sized chopped
  9. Garlic 1 inch size chopped
  10. Ginger 5 nos chopped
  11. Black cardamom 1 piece
  12. black paper 1 tbs
  13. Cinnamon sticks 10 grams
  14. Cloves 6 pieces
  15. 1-2 Bay leaves
  16. Garam masala 1 tbs
  17. Almond 10-12 nos
  18. Green Cardamom 5 nos
  19. Green chilis 5 nos chopped
  20. Frozen matar/peas 1 cup

Instructions

  1. Steps For making Dough
  2. Take a bowl and add 1 cup of warm water,yeast,and 2 tbs of Maida and mix it
  3. After Mixing it leave it for 10-15 mints so that yeast will be active
  4. After 15 mints the yeast will be active and you will see small bubble on the surface of dough
  5. at this stage add salt to taste,add 2 tbs of vegetable oil
  6. mix it continuously while adding maida slowly slowly and make a smooth dough
  7. then leave it for 20-25 mins
  8. Now till it settles lets prepare biryani for its filling
  9. For this take a pan and add 3 tbs of Vegetable oil and heat it
  10. after oil heats up add 2 nos of bay leaves and the add finely chopped onion,ginger and garlic and mix it and cook it for 1 min
  11. after onion softens a bit add chicken and mix it and cook it for another 1- 2 mins.
  12. then after 2 mins add all the spices 1 black cardamom,1 tbs black paper,salt to taste,10 grams cinnamon sticks,6 no s of cloves,10-12 nos of almond,5 nos of green cardamom,5 chopped chills, 1 tbs garam masala, and cook it for 1 min
  13. After 1 min open the lid and add 1 cup of warm water and cook it again for 1 min
  14. After 1 min add rice which is soaked for 20 min in water and mix it well and cover it and cook it for 10 min in high flame
  15. Now after 10 mins open the lid and add 1 cup of frozen peas/matar and mix it and cook it till rice is 85% cooked
  16. After that close the gas and put the biryani a side to cool down.
  17. Lets go to the Dough we have left it in step 7 .it will be double of its size now.
  18. now take this dough to the kitchen plat form and spread it with a belan like big bread/roti but make it a bit thick.
  19. Now take steel bowl and grease it from inside with vegetable oil and place the flat dough inside the bowl so that its attached to its inner surface
  20. Now fill the biryani we have prepared earlier inside the bowl and cover it by joining the edges of the dough make it like a ball
  21. for baking it you can bake it in a microwave/oven but here i will show you process how to bake it in a pressure cooker
  22. take a pressure cooker and add salt/sand at its base and pre heat it for 5 mins
  23. after preheat place a stand inside the cooker and place the bowl in which we have the dough in it and cover the cooker lid with its whistle and rubber removed
  24. and bake it on the gas for 20 mins on low flame.
  25. after 20 mins remove the lid of cooker and apply vegetable oil on the surface of dough and again cover the lid and cook it for 20 mins in low flame
  26. now after 20 mins the dough will be golden brown in color. leave it for sometime for cooling
  27. after cooling remove the dough in a plate and give a cut to it and hot spicy biryani will come out of it.
  28. now serve it to your dear one .
