ABOUT VEG HYEDARABADI BIRYANI RECIPE

Ingredients Serving: 4

  1. For rice::
  2. Basmati rice 1+1/2 cup
  3. Bay leaf 1
  4. Cloves 4
  5. Green cardamom pods 2
  6. Cinnamon stick 3"
  7. Salt 1 tesp
  8. For vegetables ::
  9. Boiled mix vegetables 1+1/2 cup
  10. Ghee 2 tbsp
  11. Cumin seeds 1 tesp
  12. Ginger chilli paste 1 tesp
  13. Onion 2 sliced
  14. Tomatoes pureed 2
  15. Salt 1 tesp
  16. Red chilli powder 1 tesp
  17. Coriander powder 3/4 tesp
  18. Garam masala 1/2 tesp
  19. Turmeric powder 1/2 tesp
  20. Milk 1/4 cup
  21. Others ::
  22. Curd 1/2 cup
  23. Green coriander leaves 2 tbsp
  24. Saffron strands 18-20

Instructions

  1. Boil rice with salt, cinnamon, cloves, cardamom and bay leaf in 4 cups of water.
  2. When almost done, strain.
  3. Mix curd, coriander leaves and saffron strands well.
  4. Toss cooked rice in curd mix.
  5. Splutter cumin seeds in ghee.
  6. Add ginger chilli paste and saute.
  7. Add sliced onions. Fry till golden brown.
  8. Add turmeric powder, coriander powder, red chilli powder and garam masala. Roast for few seconds.
  9. Add tomato puree. Roast till oil separates.
  10. Add boiled vegetables and salt. Mix well. Add milk and cook covered for 3-4 minutes.
  11. In a heavy bottomed pan/handi spread evenly half of curd rice mix. Top with half of cooked mix vegetables.
  12. Again give layers of remaining rice and mix vegetables. Cover.
  13. Put the pan/handi on hot griddle and cook on low for 4-5 minutes.
