Ingredients Serving: 6

  1. 2 cups cabbage shredded
  2. 1 medium carrot chopped in strips
  3. 1/3 cup peas
  4. 1 medium capsicum or bell peppers chopped
  5. 1 medium onion thinly sliced
  6. 3-4 green chillies split (adjust)
  7. 2tomatoes
  8. 2-3 tbsp cashews
  9. Spices list
  10. 1-2 bay leaf
  11. 2-3 cloves
  12. 1 inch cinnamon
  13. 3-4 cardamom pods
  14. 1 Javitri
  15. Masalas list
  16. 1TSP CUMIN POWDER
  17. 1TBSP RED CHILLI POWDER
  18. 1tsp kitchen king masala
  19. 1 tsp corriander powder
  20. 1/4tsp Turmeric powder
  21. 1/2 tsp Pepper
  22. 1tsp Kasuri Methi
  23. 1tbsp ginger garlic paste
  24. 2TBSP CREAM
  25. Salt to taste

Instructions

  1. Soak cashews in 5tbsp hot water for 30 minutes. Boil Tomatoes until it's skin starts to peel. Allow it to cool
  2. Remove the peel , grind tomatoes and cashews without water. Keep it aside
  3. Heat oil in a pan, add spices, saute until they splutter Add ginger garlic paste, saute until raw aroma goes away. Add onion and green chillies, sauté until onion becomes translucent. Add Masalas except kitchen king masala. Mix well
  4. Add tomato cashews paste, saute until masalas leave sides and Tomatoes start thickening
  5. Add chopped veggies, mix well. Add 1.5 cups water or veg stock. Cover and cook until 80% done stirring in between
  6. Add kitchen king masala, salt and mix well. If it's becoming dry you can add additional water. Don't have too much water as it should be thick gravy
  7. Once all veggies are cooked,add kasuri methi, mix . Add cream, mix well and cook for a minute or 2. Garnish with coriander leaves. Serve hot with rice or roti
