Ingredients Serving: 4

  1. 200 grams paneer
  2. 3 tomatoes
  3. 1 green chilli
  4. 1 inch ginger
  5. 8-10 cashews
  6. 2-3 tbsp oil
  7. 1 tsp cumin seeds
  8. 2 dry red chillies
  9. pinch of asafoetida
  10. salt to taste
  11. 1/2 tsp red chilli powder
  12. 1/4 tsp turmeric powder
  13. 1 tsp coriander powder
  14. 2 tbsp kolhapuri masala
  15. 1 tbsp coriander leaves chopped
  16. water as required
  17. to make kolhapuri masala:
  18. 1 inch cinamon stick
  19. 7-8 cloves
  20. 4 green cardamoms
  21. 1 black cardamom
  22. 2 tbsp coriander seeds
  23. 1 tbsp cumin seeds
  24. 1 tsp fennel seeds
  25. 8-10 black pepper corns
  26. 1 tbsp white sesame seeds
  27. 1/3 cup dried coconut
  28. 8-10 dry red chillies

Instructions

  1. to make kolhapuri masala:
  2. in a heavy bottomed pan, roast all the listed ingrediants for kolhapuri masala on low flame until you can get aromatic smell coming from the spices
  3. once roasted, transfer to a bowl and allow it to cool slightly
  4. once the roasted spices cools down blend this to a fine powder
  5. kolhapuri masala is ready, keep aside
  6. to make paneer kolhapuri:
  7. grind the tomatoes, green chillies, ginger and cashews in a mixer jar to make a fine paste
  8. cut paneer into squares
  9. heat oil in a pan and add cumin seeds
  10. when it starts crackling add asafoetida and red chillies
  11. next add tomato-cashew paste and saute until raw smell goes
  12. add salt, red chilli powder, turmeric powder, coriander powder and kolhapuri masala
  13. add 2 tbsp water and cook until oil separates from the gravy
  14. now add 1/2 cup water and let it simmer for few more minutes
  15. add chopped coriander and paneer chunks
  16. give a nice stir and then cook for 2-3 minutes
  17. transfer paneer kolhapuri in a serving bowl
  18. serve this super yummy paneer kolhapuri with rice, chapati, naan or paranthas
