Ingredients Serving: 5

  1. 11/4 cup buckwheat flour
  2. 5tbsp corn flour
  3. 1/2 cup brown or icing sugar
  4. 1.5 tsp Cinnamon
  5. 2/3 cup icing sugar
  6. 1 medium Apple peeled,cored and cubed
  7. 2 Eggs
  8. 100 gm soft low fat butter
  9. 1/2 cup low fat Milk
  10. 1.5 tsp vanilla extract
  11. 1.5 Tsp Baking Powder

Instructions

  1. Preheat the oven to 180 for 10 minutes
  2. Sieve all dry ingredients. Mix 1/2 cup brown sugar or alternatively icing sugar with Cinnamon and keep it aside
  3. Blend Butter and 2/3 cup icing sugar until creamy Add eggs, 1 at a time and blend until pale yellow in color. Add vanilla extract. Now add sieved dry ingredients with milk alternately and mix using cut and fold method.
  4. Pour batter to half in prepared loaf pan Add half of apples evenly all over batter. Sprinkle half amount of Cinnamon sugar on top of apple. Now pour remaining batter. Add rest of apple on top. Sprinkle rest of Cinnamon sugar on top
  5. Bake for 25-40 minutes until done. There will be rich aroma while baking. Allow it to cool completely. Cut and serve
