ABOUT Cardamom & Cinnamon Spiced Carrot Cake RECIPE

This cardamom & cinnamon spiced carrot cake is melt in your mouth kinda cake. And I assure you that you cannot stop eating at just one slice. The warm cardamom and cinnamon flavors are so comforting in this monsoon whether. Well I have officially made this cake slice and a cup of green tea my breakfast.

Ingredients Serving: 6

  1. 1 cup Flour(atta or maida)
  2. 1/2 tsp salt
  3. 1 tsp baking powder
  4. 3/4 cup granulated sugar
  5. 1 tsp cardamom powder
  6. 3/4 tsp Cinnamon powder
  7. 1/4 cup olive oil or any oil
  8. 1/4 cup milk
  9. 1 egg or 1/2 cup curd for eggless
  10. 1 cup grated carrot
  11. Any nuts to top(i have used almonds)

Instructions

  1. In a bowl sift flour, salt, baking powder, cardamom and cinnamon. Mix and keep aside.
  2. In another bowl whisk together egg and sugar or curd and sugar for eggless version.
  3. Once mixed add oil & milk and mix until smooth.
  4. Now add the flour mix. Mix to a uniform cake batter. Now fold the carrot.
  5. Pour in a loaf pan.
  6. Top with nuts of your choice.
  7. Bake at 180C for 30 min. Insert a toothpic in the middle to check.
  8. Remove from the tin after 5 min on a wire rack and cool completely before slicing.
  9. Enjoy with tea.

Simple recipe with great flavours. I added chopped Pecans for a bit of additional texture.
