Ingredients to make Rustic Brulee

  • Rice 1/2 cup
  • Grated carrot 1/2 cup
  • Brown sugar 2 tbsp + 3 tbsp
  • Egg yolk of 1egg ( optional)
  • Milk 2 cups + 1/2 cup
  • Double cream 3 tbsp
  • Water 1

How to make Rustic Brulee

  1. Cook rice and carrot with 1 cup water and 1 cup milk.
  2. When done and soft add 1 cup milk and cream cook well till thick.
  3. Beat the yolk add 1/2 cup milk and mix briskly in the pudding.Keep stirring till cooked, It usually takes 2-3 min.
  4. Pour the pudding in bowls.Let it cool.
  5. Sprinkle sugar on the top of pudding and burn it using blow torch and sugar crystallises
My Tip: use Double Cream.
